Chicken, Rice, and Walnut Casserole

  • Recipe Ingredients :
    1. 3 cups cooked chicken, cut in bite-size pieces
    2. Half cup walnuts, chopped
    3. 2 tablespoons butter
    4. 8 cups brown rice, cooked
    5. 1 cup chicken broth
    6. 2 onions, minced
    7. 4 large eggs, lightly beaten
    8. 1 cup fresh parsley, chopped
    9. Half cup Parmesan cheese, freshly grated
    10. 1 and half cups sharp cheddar cheese, grated
    11. 1 teaspoon dried sage
    12. 2 garlic cloves, minced
    13. Half cup teaspoon cayenne
    14. pinch of salt and pepper

  • Steps To Follow :
    • Saute onion until translucent.
    • Mix onion with all remaining ingredients except walnuts, quarter cup cheddar cheese.
    • Take all the mixture to lightly oil coated 2-quart baking dish.
    • Top with walnuts and remaining cheese.
    • Preheat the oven to 350 degrees (F).
    • Bake it to preheated 350 degrees (F) for 30-40 minutes or until top is golden.
