Chicken, Rice, and Walnut Casserole
- Recipe Ingredients :
- 3 cups cooked chicken, cut in bite-size pieces
- Half cup walnuts, chopped
- 2 tablespoons butter
- 8 cups brown rice, cooked
- 1 cup chicken broth
- 2 onions, minced
- 4 large eggs, lightly beaten
- 1 cup fresh parsley, chopped
- Half cup Parmesan cheese, freshly grated
- 1 and half cups sharp cheddar cheese, grated
- 1 teaspoon dried sage
- 2 garlic cloves, minced
- Half cup teaspoon cayenne
- pinch of salt and pepper
- Steps To Follow :
- Saute onion until translucent.
- Mix onion with all remaining ingredients except walnuts, quarter cup cheddar cheese.
- Take all the mixture to lightly oil coated 2-quart baking dish.
- Top with walnuts and remaining cheese.
- Preheat the oven to 350 degrees (F).
- Bake it to preheated 350 degrees (F) for 30-40 minutes or until top is golden.
