Chicken Salad
- Recipe Ingredients :
- 4 whole boneless chicken breasts garlic powder salt and pepper
- 1 head iceberg lettuce, chopped
- 1 head romaine lettuce, chopped
- 4 ounces Swiss cheese, shredded
- 3 avocados, peeled and quartered
- Quarter cup fresh dill, chopped
- 8-ounce package bean sprouts
- 8-ounce can sliced water chestnuts, drained
- 6-ounce can ripe olives, pitted and drained
- 2 tablespoons vinegar
- 2 tablespoons olive oil
- 2 tablespoons orange juice
- 4 eggs, hard-boiled and quartered
- 1 bunch spinach, torn
- 1 and a half -ounce jar pimientos
- sliced 1 red onion,
- sliced fresh mushrooms (optional)
- Dressing Ingredients:
- quarter cup pickle relish
- 1 pint mayonnaise
- quarter cup chili sauce
- 2 tablespoons onion, grated
- Steps To Follow :
- Season chicken with salt, garlic powder and pepper.
- Bake it in preheated 350 degrees (F) for 30 minutes or until done.
- Cut into large chunks.
- Marinate in vinegar, oil and orange juice for 24 hours in refrigerator.
- While serving combine remaining salad ingredients with chicken.
- Combine with dressing ingredients.
- Toss with salad.
